I have eaten and cooked poke all my life. It tastes better than spinach, and surprisingly good. To pick, it is best to pick just the young leaves, not mature leaves before the plant goes to seed. Wash throughly, put in a pot and cover the pole with water and bring to a boil. Let’s it boil for a couple minutes, strain out all the water, repeat this process 4-5 times. Being from the south we then fry the poke in a cast iron skillet in bacon fat for a few minutes to evaporate the water and add a bit of seasoning. Myself I fry the poke in a bit of butter then serve. Don’t be surprised if you didn’t pick enough the first time. Enjoy.
